Memoni Gajar ka Achar / Instant Carrot Pickle

Quick and easy recipe of memoni traditional achar / pickle

Ingredients
*************

Carrot (julian cut ) : 250 gm
Fresh garlic crush: 1 tablespoon
Fresh corriander leaves : 2-3 tablespoon
Salt : 1 teaspoon
Red chilli powder : 2 tablespoon
Turmeric powder : 1 teaspoon
Corriander powder : 1 1/2 tablespoon
Corriander seed crush : 1/2 tablespoon
Oil : 1/2 cup

Procedure
***********

Mix all ingredients very well
Leave it for 30 minutes
Serve

Gajjar : 1 pao ( lambai may kaat lain)
Hara dhania : 2-3 khanay k chamach
Taza lehsun :1 khanay ka chamach
Namak : 1 chai ka chamach
Lal mirch pissi hoi : 2 khanay ka chamach
Haldi : 1 chai ka chamach
Dhania powder : 1 1/2 khanay ka chamach
Dhania cuta howa : 1/2 khanay ka chamach
Oil : 1/2 cup

Tareeka

Tamam ajza ko achi terhan mila lain
Adha ghanta chor dain , phir khanay k saath pesh karain

Every family has their own family recipe of this Memoni Traditional Sweet. This is my way of making this sweet .

Ingredients

***********
Whole wheat flour : 1/2 kg
Clarified butter: 1/2 kg
Jaggery : 1 glass
Mix nuts: 125 gm
Edible gum : 125 gm
Milk : 1/2 cup

Procedure
**********

Coarsely crush nuts
Heat half quantity of clarified butter , add gum 1 tbsp at a time
When gum pop up,take out in plate
Crush some of gum ( optional)
Heat remaining half quantity of clarified butter ,
Add flour and roast till aroma comes out, approx 15 to 20 minutes on slow flame
Stir continues
Heat the pan with the leftover clarified butter after popping edible gum
Add grated jaggery , cook till it melts
Add milk , mix well and cook for 5 minutes
Add jaggery sauce in roasted flour, mix well
Cook for 2-3 minutes till all liquid absorb
Add edible gum and chop nuts ( keep some for garnishing)
, mix well
Put in greased pan , press firmly with spoon ,hand or fondant smoother
Garnish with nuts n gum
Cut pieces in desire  shape (square or diamond )
Leave it to cool completely
keep in air tight jar

Raita Recipe

Raita

Hara raita is best to serve with biyani,pulao or any desi rice dish.
I also serve it with our traditional desi snacks like samosa, Kabab etc
You can make Chatni in large quantity and freeze in small portion, at time of need you can just beat yogurt and add Chatni​ in it and  raita is ready to serve

Ingredients

Fresh Coriander : 1 cup
Yogurt : 1 cup
Mint leaves : 10-12 Leaves
Garlic : 2 cloves
Cumin Seeds : 1 tsp
Lemon juice : 1 tbsp
Salt : 1/2 tsp or as per taste
Green chillies : 3

Method
~Put fresh coriander,mint leaves, garlic, green chillies, salt,lemon juice,and cumin seeds in food processor
~Grind in fine paste
~Beat yogurt to remove all lumps
~Add Chatni and mix well
~To adjust consistency, you can add water but cateres usually add white soft drinks in it. 
~Ready to serve

Chocolate Chip Cookies

Today I am sharing with you one of my favorite cookie's recipe.
Butter : 125 gms
Castor Sugar : 1/2 cup
Brown sugar : 1/2 cup
Baking Powder : 1 tsp
Egg : 1
Vanilla Essence : 1/4 tsp
All purpose flour : 2 1/4 cup
Chocolate Chip : 3/4 to 1 cup
Method
All ingredients should be at room temperature
Pre heat oven at 200 degree c
Put butter, Castor Sugar, Brown Sugar, vanilla, Baking Powder in a bowl
Beat until light and fluffy
Add all purpose flour
Beat again
Add Chocolate Chip , fold with spatula
Scoop out mixture on greased tray or make small balls with hands and place on greased tray
Leave gap between cookies, they will spread while baking
If you want sprinkle some more Chocolate Chip on top of each cookie, it's optional
Bake in pre heated oven @ 200 degree for 20 minutes or until color change
Leave in baking tray for 5 minutes
Take out on wire rack and cool completely
Keep in air tight container

Hyderabadi Chicken Dalcha

Hyderabadi Chicken Dalcha

This is so easy recipe of chicken dalcha. Usually Kids avoid to eat dals , try to give them like this with there favorite chicken in it. We can also substitute boneless beef cubes with boneless chicken or you can use chicken with bones to keep it economical

Ingredients

For Daal
Petite yellow lentil (moong daal : 1/2 cup
Red lentil (Lal masoor Dal) : 1/2 cup
Turmeric powder: 1/2 tsp
Salt : 1 tsp or as required

For Chicken
Boneless chicken : 500 gm
Oil : 1/2 cup
Garlic paste : 1 1/2 tsp
Ginger paste : 1 tsp
Onion ( chopped) : 2 medium
Tomato (chopped) : 1/2 cup
Salt : 1 tsp
Red chilli powder: 2 tsp
Red chilli flakes: 1 tsp
Turmeric powder: 1/2 tsp
Salt 1 tsp
Tamarind pulp : 1/2 cup

For Tempering
Oil : 1/4 cup
Button red chilli: 6-8
Curry leaves: 10-12
Fenugreek seeds: 1/2 tsp
Mustard seed: 1/2 tsp
Black seeds: 1/2 tsp
Cumin seeds: 1 tsp

Method
Soak both daals for 30 min
Put it in cooking pan with 3-4 glass of water
When first boil comes, you can see scum on top
Remove it
Add turmeric powder and boil till Dal become tender
Add salt , cook for 2 minutes more
Blend it in fine paste

In another pan heat oil add onion
Fry till it becomes golden brown
Add chicken, saute for 2 Minutes
Add ginger, garlic, salt, turmeric powder, red chilli powder,red chilli flakes, and tomatoes
Saute for a while
Cover and cook for 5 min
Chicken will be done in its own water but if u use chicken with bones, then add 1/2 cup water
Cover and cook till chicken done and oil becomes separate
Add prepared Dal paste and tamarind pulp in it
Mix and let it cook for more 5 Minutes
For Tempering
Heat oil , add button red chilli
Fry for a while
Add all remaining ingredients
When seeds crackle
Pour it over Dal
Garnish with fresh corriander leaves and green chillies
Serve with bhagaray rice 🍚

Chocolate Chip Cookie Cupcake in Microwave

Ingredients
Butter: 1 tbsp
Castor sugar : 1 tbsp
Brown sugar : 1 tbsp
Vanilla essence: 1/4 tsp
Egg yolk: 1
All purpose flour: 3 tbsp
Baking soda : pinch
Chocolate Chip : 2 tbsp
Method
Put butter in mug and microwave it for 10-13 sec
Take out, add sugar and essence
Mix well
Add egg yolk and mix
Add all purpose flour and baking soda,
Mix again
At last mix chocolate chips
Mix well and microwave it for 1 minute
**This recipe is good to make just before serving
**If you will use mug then microwave it for 1 minute
**If you divide in 2 small Cups then microwave it for just 50 sec

Chocolate Fudge Cake in Microwave

Ingredients
All purpose flour : 1 1/2 cup
Coco powder : 2 tbsp
Baking soda : 1/2 tsp
Baking powder: 1 tsp
Castor sugar : 3/4 cup
Oil : 3/4 cup
Milk : 1 1/4 cup
Eggs : 2

Method
Sieve & Mix dry ingredients in bowl
Mix wet ingredients in separate bowl
Add dry ingredients into wet ingredients and mix it well
The batter should be runny
Take microwave safe dish, I used pyrax dish
Line it with baking paper
Pour cake batter in it
Microwave for 6  minutes on 100%
If you feel that it still uncooked then again microwave for 30 secs
The cake is cooked when the surface is slightly moist,
Leave to stand for 5 minutes
Then turn the cake on wire cooling rack

Frosting
Take 200 gm cream and 200 gm dark Cooking Chocolate
Microwave for 60 seconds to 75 seconds
Mix it well
Refrigerate for 1-2 hours
Beat , till it changes it's color and texture.
Cover and decorate cake

Haleem

Haleem

Ingredients

Whole wheat : 1 cup
Whole barley : 1/2 cup
Split chickpeas lentil: 3/4 cup
Red lentil : 1/2 cup
Moong lentil 1/2 cup

Boneless Beef : 1/2 kg
Oil : 1cup + 1/4 to 1/2 cup extra
Salt : 2 1/2 tsp
Onion : 2 medium
Red chilli powder : 2 tbsp
Turmeric powder : 1 tsp
Corriander powder : 1 tsp
All spice powder : 1 tbsp
Green cardamom : 4
Bay leave : 2
Ginger : 1"piece
Garlic cloves : 3-4
Nutmeg powder : pinch
Mace Powder : pinch

Method

Wash and soak wheat and barley for 5-6 hours
Wash and soak lentils for 2-3 hours
Boil until all ingredients become tender
Grind cardamom and bay leaves
Then add all spices with 1/2 cup water in it , and blend in fine paste
In separate pan , heat oil add onion
Fry onion till golden brown color
Take out Hal quantity of onion in separate plate
In remaining oil n onion , add beef
Fry for 2 minutes
Then add prepared Masala
Fry till oil floats on top
Add 3-4 glass water, cover n cook till done
Add meat gravy in lentils
Blend all ingredients in a fine paste
Heat extra oil , add brown onion  for few seconds , and give baghar on Haleem
Serve with brown onion, lemon wedges, fresh coriander, green chillies, and Chaat Masala

Tawa Qeema

Tawa Qeema



Ingredients:

Minced Meat (Beef /Mutton) : 250 Gm
Tomato : 3 medium blended
Onion : 1 medium ( fine chopped)
Salt : 1/2 tsp
Red chili powder : 1 tsp
Red chili flakes : 1/2 tsp
Turmeric powder : 1/4 tsp
Coriander seeds: 1 tsp ( dry roast and crushed)
Turmeric powder : 1/4 tsp
Oil : 1/2 cup
All spice powder : 1/4 to 1/2 tsp
ginger garlic paste : 1 tsp
dry fenu leaves : 1 tsp
yogurt : 2 - 3 tbsp
Green chili : 3-5  

Method:

Heat oil add onion , saute for 2 minute
Add ginger garlic paste and saute
After 1 minute add minced meat, saute it till it change its color
Add tomatoes, salt , turmeric powder, coriander seeds , red chili powder , red chili flakes
Fry it , till all ingredients mix well
Cover and cook on slow medium flame
It will cook in its own water.
After qeema becomes dry , add yogurt, all spice powder, fenugreek leaves,coriander leaves, green chillies 
If you have scraper spoon like use for kat a kat, then do kat a kat and mix all ingredients
Otherwise we already used chopped ingredients , so no need to crush them
Leave it on dum for a while
Serve hot with Naan and Salad

Pineapple Halwa

Ingredients
Pineapple Chunks: 1 tin (565 gm)
Syrup from pineapple tin: 1/2 tin
Cardamom powder : 1/4 tsp
Clarified butter : 4 tbsp
Sugar : 1/2 cup or as per your taste
Milk powder: 1 cup
Nuts : for garnishing
Method
Fine chop pineapple or put in food processor and grind.
Cook pineapple with syrup, if you chop it with knife then mash it with spoon or masher while cooking
When syrup dry ,add sugar
Sugar will dissolve
When sugar will almost dry , add clarified butter and cardamom powder.
Cook few minutes.
Then add milk powder, quickly mix and remove from flame
Garnish with nuts

Fruit Cream Chaat / Cream Fruit Salad

Cream Fruit Chaat or Salad Recipe.
It is very easy recipe and refreshing meal
 for summer days.
Cream Fruit Chaat is famous street food during Ramadan


Ingredients:
Apple (small pieces) : 1 cup
Banana ( small pieces): 1cup
Grapes : 1 cup
Pineapple chunks: 1/4 to 1/2 cup
Peach (small pieces) : 1/2 cup
Salt : 1/2 tsp
Sugar: 3 tbsp
Chaat Masala: 1/2 tsp
Black pepper powder: 1/4 tsp
Lemon juice: 1 tbsp
Cream : 1 cup

 Method:
In large bowl mix cream,salt,sugar, black pepper powder,chaat masala and lemon juice.
Then add all fruit and mix well
Refrigerate for few hours before serving
***Fruits can be substitute with any seasonal fruit
***You can add in some cocktail tin fruits too

Coffee Crunch Ice Cream

Coffee Crunch IceCream


Ingredients

Non dairy whipping cream : 2 Cups
Condensed milk: 1 cup
Instant coffee: 2 tbsp
Milk : 2 tbsp
Coffee Essence: 1/2 tsp
For Crunch or Praline
Sugar : 1/2 cup
Method:
Refrigerate whipping cream for few hours
When cream becomes semi solid, take it out
Beat it, till soft peaks form
Add condensed milk
Mix coffee and milk
Add diluted coffee in cream mixture
Beat for a while
Add coffee Essence, Mix it
Fill in air tight container
Refrigerate for 2 hours
Take out IceCream and fold crunch in it
Again refrigerate till completely set
Soft Scoop Freezer IceCream is ready to serve
Scoop out IceCream in bowl
Top it with some more crunch
Pour some chocolate syrup , it's optional
For Crunch
Put sugar in frying pan
Cook on slow flame
Don't stir it, till it starts caramelised. 
When sugar completely caramelised , spread it on greased marble surface.
Let it sit for a while
It will become hard, crush it in small pieces .

Nutella Milkshake

Nutella   Milkshake:

Easy and quick recipe for Nutella Lovers.

Ingredients:

Nutella : 1/2 cup
Milk : 1/2 cup
Vanilla Ice Cream : 1 cup
Ice Cubes : 1 cup
Whipped Cream : for topping


Method:

Put all ingredients in a blender
Blend it very well
Pour in chilled glass
Make a swirl with whipped cream
