Mutton Karahi

Mutton Karahi

Ingredients

Mutton : 750 gms
Oil : 1/2 to 3/4 cup
Ginger Garlic paste : 1 tbsp
Salt : to taste
Tomatoes : 5
Freshly grated Ginger : 1 tbsp
Freshly grated garlic : 1 tbsp
coriander seeds : 1 1/2 tbsp
Black pepper corn : 1 1/2 tsp
Cumin Seeds : 1 1/2 tsp
Yogurt : 1 cup
Dry fenugreek leave: 1/2 tsp
Ginger Julian and fresh corriandr leave for garnishing

Method

Boil mutton with ginger garlic paste and enough water in which meats get tender and 1 cup of stock left
Dry roast coriander seeds, cumin seeds and black pepper corn on slow flame and leave it to cool then coarsely grind it in food processor
Heat oil in pan  ,Add grated Ginger garlic ,saute a while
After aroma comes, add boiled meat,cook it for 2 minutes
Add tomatoes in two halves and 1/4 to 1/2 cup stock
cover and cook till tomatoes become soft
Remove tomato peel,and bhunify it till tomatoes become dissolve
Add beaten yogurt, again cook on high flame till all water dries ,
Add prepared Masala and Salt ,mix well
Then add fenugreek leaves, and 8-10 green chillies
Mix well and cook for few more minutes
Serve hot with Rogni Naan and salad


*This Recipe has very mild spices ,if u want to make it spicy then cut green chillies vertically in 2 halves before adding in Karahi
*Add lemon juice in end,(optional)

Biryani

Biryani
 Simple and easy biryani recipe

 Ingredients

For rice.
-------------
 Basmati rice : 1/2 kg
 Salt 4 tsp
 Water : 10 -12 glass

 For Potatoes
---------------------
 Potatoes : 4 medium
Salt : 1/2 tsp
Turmeric powder : 1/4 tsp

 For Chicken
_--------------------
 Chicken : 1/2 kg
Oil : 1/2 to 3/4 cup
 Onion : 2
Green chili paste: 10 to 15
Yogurt: 1/2 cup
Salt : 1 tsp
Red chilli powder: 1 tsp
Ginger : 1 tsp
 Garlic : 1 tsp
 Turmeric powder: 1/2 tsp
Coriander powder: 1 tsp
Cumin seeds : 1/2 tsp
Black cumin seeds : 1/2 tsp
Aniseeds :2
Black salt : 1/2 tsp
Tatri : 2 pinch
 Tomato : 2
Green chili : 8
 Mint leaves : 1/4 cup
 Coriander leave : 1/4 cup
 Yellow food color
Arq e gulab or kewra water : 1 tbsp

 Method
--------------
Soak rice for 30 minutes
 Boil water ,add salt and one bay leaf
Add soaked rice ,boil till 1 kani left
 Drain extra water , keep it separate

 Peel and cut potatoes in two halves
 Boil till complete done,

 Mix all dry ingredients and whole spices with yogurt
Heat oil in pan Add sliced onion,cook till brown
 Take out onion on kitchen towel and half quantity of oil in separate cup for later use
 Add chicken and ginger garlic ,Saute till color change
Add yogurt with spices Saute till oil separates
Add 1 glass water and green chili paste, cover and cook till 1 cup gravy left
Add all spice powder 1 tsp + mace and nutmeg powder 1/4 tsp, mix well
Add chopped tomatoes and boiled potatoes, cover and cook for 2 minutes
Add brown onion, whole green chili,mint leaves, fresh coriander leave,half done rice
 On top of rice sprinkle some yellow food color ,and kewra water
 Pour oil which we separate earlier
 Make few holes in rice till bottom of pan with spoon handle
Cover and cook 2 minutes on high and for 8 - 10 minutes on low flame
Serve biryani with raita and fresh vegetables salad 🥗

Maltesers Chocolate Cake


Ingredients
Eggs : 3
All purpose flour : 2 cup
Baking powder : 2 tsp
Baking soda : 1 tsp
Vanilla essence : 1 tsp
Castor sugar : 1 1/2 cup
Oil : 1 cup
Milk : 1 cup
Sour cream : 1/2 cup
Maltesers powder : 1/2 cup
Frosting
Tetra pack cream : 1 1/2 cup
Maltesers powder : 4 tbsp heaped
Dark chocolate : 200 gms
Milk chocolate : 200 gms
Whipping cream : 1 cup
Maltesers chocolate for decoration
Method
Pre heat oven at 180 degree C
Grease two or 3 8" cake pan
Sift flour,baking soda,baking powder and maltesers powder
Beat sugar and oil on high speed until well combined
Add eggs 1 at a time until mixed, beating well after each addition
Add essence and mix
Slowly add dry mixture on low speed alternative with milk in two batches
Add sour cream,beat on slow speed
Pour in prepared pan
Bake for 40 minutes or until tooth pick comes out clean
Frosting method
Heat cream in sauce pan ,till bubble begin to appear on edges,
Add maltesers powder into cream and mix
Remove from flame, add both chocolates
Leave for few minutes
Mix it well, let it sit for few hours then beat with electric beater
Apply this in between cake layers as filling
For topping
Beat whipping cream till stif
Then mix in leftover frosting, mix well with beater
Use this for covering cake and decorations
Assemble
Place first layer of cake on cake board
Soak with milk or sugar syrup
Apply whipped ganache as filling
Put second layer of cake, again soak and apply frosting
Place third layer of cake ,soak it also
Cover sides and top of cake with ganache mixed with whipping cream
Decorate cake with leftover frosting and maltesers chocolate
*If you don't have sour cream , mix half cup cream with 1 1/2 tbsp vinegar,let it sit for 10 minutes
**If you don't have maltesers powder,then  you can substitute it with chocolate horlics, Ovaltine or Milo
*For moisten cake, use chocolate milk or sugar syrup
*If you want to make it more rich, You can add crushed maltesers chocolate in between cake layers

Nutella Sandwich Cake

Nutella Sandwich Cake

I made these nutellicious chocolate sandwich cake for kids school lunch box.They shared with their class mates and Alhumdulillah response was great .

Ingredients
Butter : 150 gms
Eggs : 4
Castor sugar : 1 cup
All purpose flour :1 1/4 cup
Baking Powder : 1 tsp
Vanilla essence : 1 tsp
chocolate : as required
Nutella: as required


Method

Mix all purpose flour and baking powder (dry mixture)
Pre heat oven at 180 degree
In separate bowl beat butter for 30 seconds ( butter should be at room temperature)
Add castor sugar , beat until sugar dissolve completely , its color changes to white and texture becomes light and fluffy
add 1 egg  and 1 tbsp of dry mixture
Beat for few seconds , until egg mix well
Add remaining eggs one by one with 1 tbsp dry mixture with each egg
Add remaining dry mixture and fold with spatula
Pour in greased rectangular baking tray
Bake for 20 to 25 minutes or until toothpick inserted comes out clear
Cut in two half after completely cools down
Apply Nutella on bottom layer
Cover with top layer
Cut small rectangle slices
Melt chocolate on double boiler or in microwave
coat each cake slice with chocolate and place it on wire rack to set
Fill some melted chocolate in piping bag and decorate each slice with it

Pakistani Lunch

Daal, Bhagaray Rice, Achari Mirch, Instant Carrot Pickle

Daal
Petite yellow lentil:3/4.  Cup
Red lentil : 3/4 cup
Salt : 1 1/2 tsp or to taste
Red chilli powder: 1 1/4 tsp
Garlic paste: 1 tsp
Ginger paste: 1tsp
Turmeric powder: 1 tsp
Onion : 1 small (chopped)
Tomatoes : 2 medium (chopped)
Green chillies : 2 medium

Method
Soak both lentils (Daal ) for 30 minutes
Boil lentils with all ingredients
Cover and cook on slow flame till lentil becomes tender 
If u like coarsely Dal then leave it as it is or if you like fine paste like me 😃, then blend it 
Ptepare Baghar

Baghar
Oil : 1/2 cup
Onion : 1 medium (sliced)
Garlic : 1 tsp (chopped)
Cumin seeds: 1 tsp
Button red chilli: 6-7
Curry leaves: 10-12
Fresh Coriander Leaves: 2 tbsp (chopped)

Method
Heat oil ,add onion
Cook till onion start turning brown
Add garlic,saute a while
Add cumin seeds, button red chilli,and curry leave,saute 
At last add fresh corriander
Pour hot Baghar (tarka) over Dal
Cover and leave it for 5- 10 minutes

Serve with bagharay rice

Bagharay rice
Rice  : 1/2 kg
Salt : 2 tsp
Oil : 1/2 cup
Onion : 1 medium
Cumin seeds : 1 tbsp
Cinnamon Stick : 1

Method
Soak rice for 20 - 30 minutes
Heat oil, add sliced onion
Fry till turns brown
Add cinnamon stick and cumin seeds
Saute for a while
Add water , rice and salt
Water level should be 1 inch above rice
Cook till almost 3/4 th water  absorbed, 
Cover and cook on slow flame for 10 minutes 
Bhagaray Rice are ready to serve with Daal

Instant Carrot Pickle
Carrot : 250 gms (Julian cut)
Oil : 1/2 cup
Red chilli powder: 2 tsp
Corriander powder: ,1 1/2 tbsp
Corriander seeds: 1/2 tbsp (roasted & crushed)
Salt : 1 tsp
Turmeric powder: 1/2  to 1 tsp
Fresh Coriander Leaves: 2-3 tbsp
Garlic paste : 1 tsp to 1 tbsp

Method
Mix all ingredients very well
Let it sit for 30 minutes
It's ready to serve

Achari Mirch
Green Chili: 10 - 12 (Large)
Corriander powder: 1/4 cup
Cumin seeds powder : 3 tbsp
Salt : 1 tsp
Turmeric powder: 1 tsp
Nigella seeds(kalonji) : 1 tsp (crushed)
Fenugreek seeds: 1/2 tsp (crushed)
Sugar: 1 tsp
Coriander seeds : 1 tbsp (roasted & crushed)
Tamarind pulp : approx 1cup
Oil : 2tbsp

Method
Slit green chillies
Remove seeds if don't want it to be too spicy, (but remember that I didn't use  red
Chili powder in it )
Mix all dry ingredients in a bowl
Add tamarind pulp and Make a paste
(Maybe you need more or less tamarind pulp then me)
Fill all green chillies with this paste
Heat oil, spread chillies in fry pan
Cover and Cook for 3-4 minutes
Change sides, again cook for few more minutes,
Cook from all sides,
Serve with Daal Chawal
